Since I have become a restaurant consultant I am amazed at how some of us ignore running a business by gaining information from deriving costs....you know the soundest business practice since spinning the wheel. Weekly cost analysis could be the single most important piece of analysis that a restaurant owner can attain because once you get it up and running it will show you where there is smoke - which usually leads to fire.
